Jack joins the illustrious culinary staff at Hotel Emma where "food is joy", for a pop-up demonstration on sausage making.
Texas native Jack Matusek has spent the last year working with some of the most notable butchers in the world. Join Hotel Emma’s Culinary Concierge for this 1.5-hour class as Jack shares his stories of curing pork in France, slinging steaks in Italy, and raising pigs and poultry in Denmark. Jack will walk each guest through some simple at-home charcuterie recipes with a Texas twist. You’ll work side-by-side with Jack curing and smoking Bacon and whipping up Jalapeno and Cheese Sausage. Guests will grind, season, stuff, rub, and sample in this hands-on workshop.
Nibble to your heart's content and then head home with some sausage, recipe cards, and a Raw Republic Meats apron.
